Here's what you'll need and how to make it:
2 ½ cups baby bella mushrooms
3-4 Tbsp unsalted butter
2-3 Tbsp olive oil
1 cup baby spinach
3 cloves garlic
1/3 cup crumbled goat cheese
Salt and pepper to taste
Toasted bread of choice
Finely mince garlic. Over medium heat, melt 2 Tbsp butter and 1 Tbsp olive oil in a large skillet and cover.
Sauté the mushrooms in batches. Make sure not to crowd the pan so the mushrooms crisp up evenly. Sauté for 4 minutes, then flip the mushrooms halfway through and season with salt and pepper. Add more butter and olive oil as needed for the second batch of mushrooms. Season with salt and pepper and remove from pan.
Add a bit more olive oil and butter to the pan and toss in the spinach and garlic. Season with salt and pepper and sauté until the spinach is wilted, about 1 minute.
Add the mushrooms back into the pan and create pockets for the eggs. Crack an egg into each pocket and cover, cooking eggs cook 2 1/2 – 3 minutes. Tip: don't lift the lid! This ensures the egg whites cook from the top as well as the bottom. Remove from heat and season with salt and pepper. Crumble goat cheese over top and serve with toasted bread.
