Here's a healthy weeknight meal that is sure to satisfy your carb cravings as well as prepare your body for a successful plasma donation the next day! Southwestern stuffed sweet potatoes will keep you full and fortify your body with iron, manganese, and vitamins A, B, and C. Here's what you'll need and how to make them:
4 5-inch long sweet potatoes
1 tsp oil
1/2 cup onion chopped
3/4 cups black beans
3/4 cups frozen corn
1 cup cherry tomatoes cut in half
1 tsp cumin
1 tsp chili powder
2 TBS chopped cilantro, more if you wish to garnish
1 lime juiced
4 TBS mexican blend shredded cheese I used 2%
4 TBS Greek yogurt for garnish if desired
You can use an oven, but why when you can microwave these on high for 10 minutes? Rinse and dry the potatoes, then poke holes in them with a fork for ventilation. Place on a microwave safe plate for 8-10 minutes until tender.
While the potatoes are cooking, drizzle oil into a skillet and heat for 30 seconds. Add onions and sauté for 3-4 minutes until brown. Once the onions are sautéed, stir in cumin and chili pepper until mixed well, then add beans, corn, and tomatoes. Sauté for 2 minutes. Add lime and cilantro and stir for 1 minute, then remove skillet from heat.
Cutting one potato at a time lengthwise, scoop about a ¼ cup of sautéed filling into the slit. Add about ½ a tablespoon of cheese on top, then add ½ a tablespoon of Greek yogurt on top of that. Repeat on all potatoes and add cilantro to garnish if you wish.
