Iron-rich recipes: Nordic oats with walnut topping

If you're an oatmeal fan, this breakfast is for you! Chock full of nuts for an iron and protein-packed start to your day, nordic oats is a simple, delicious way to get all the nutrients you need to make a successful donation of blood plasma. Also, the walnut topping is a flavorful addition that will keep you energized all day! Here's what you'll need and how to make nordic oats with walnut topping: 



1 cup steel-cut oats 

1 tsp sea salt 

1 cup walnuts, chopped 

½ cup unsweetened coconut chips or flakes 

⅓ cup pumpkin seeds 


In a large pot, bring oats, salt, and 4 cups water to a boil. Once water is boiling, reduce pot to medium heat and cook, uncovered, for 25 minutes. Stir occasionally.  

While oats cook, add walnuts, coconut, and pumpkin seeds to a large skillet Toast over medium for 1 to 2 minutes until they are fragrant and begin to brown. Transfer to a bowl and cool before storing in an airtight container or jar if you wish to store it (can be stored up to 2 months). 


Scoop oats into 4 bowls and spoon nut mixture on top. Drizzle syrup or sugar for sweetness if desired.
